L. monocytogenes (Lm) contamination in sheep’s cheese produced from thermized or pasteurized milk can be traced back to post-process environment. Lm prevalence and distribution on environmental surfaces, on Ricotta salata and Pecorino Romano (PR) surfaces were investigated in two sheep’s milk cheese factories. PFGE typing was also carried out on 70 Lm isolates, to trace the strains in environments and product surfaces. Lm prevalence ranged between 22.7% and 30.0% in the environmental samples whereas it was 7.1% and 9.1% on PR rind. The washing and ripening areas were the most contaminated. Lm isolated strains were clustered in 8 PFGE groups and the same strains were detected in the PR rind and in the environmental surfaces.
