Lipids of two autochthonous species of Sardinia have been studied: wild boar (Sus scrofa) and mouflon (Ovis aminon). It has been determined: water content % for determination of total lipids (Bligh and Dyer); total and, for moufion tissues only, apolar lipids % (by SPE); fatty acids composition %, by derivatization and following GLC of methyl esters; unsaturation and polyunsaturation parameters from 1H-NMR spectra and GLC data; glyceridic forms by TLC (qualitative). We have utilized for analysis muscular tissues and entrails from 3 male mouflons (protected species) and muscular tissues from 15 different male and female wild boars. The lipid content is higher in boar than in mouflon muscular tissues, with a different ratio saturated: monounsaturated : polyunsaturated fatty acids; in muscle of wild boar the values are 2.3: 3.4 :1.0. In mouflon are 1.2 :1.1 :2.l for the muscle; 2 .1 :1 .1 :1 .0 for the brain, 1.8 :1.0 :1.3 for the liver and 1.6 :1.0 :1.2 for the kidneys.
