The objective of the present thesis was to acquire experimental data on the lipid fractions of milk of two goats breed. It was determined the effect of breed on lipid profile. In the first year, it was carried out using one group of 23 Maltese goats and one group of 25 Sarda raised in two dairy farms (N=48), in the second, one group of 41 Maltese goats and one group of 42 Sarda goats was utilized in the same two dairy farms (N=83). The study was carried out during two years of lactation. Individual milk samples were collected monthly from each goat for the two lactation season. The protocol for analysis of milk lipids, developed in the first year of lactation, involves the use of HPLC and GC-MS for the separation and identification of individual fatty acids. The analysis of lipids for the second year of lactation were obtained through a single instrument: a GC-FID equipped with a highly polar capillary column. On each goat breed we evaluated the milk fat content in saturated, monounsaturated, polyunsaturated fatty acids, plus the detailed composition in t-FA and CLA isomers. The n-3 polyunsaturated fatty acid docosahexaenoic acid (C22:6, DHA) content was higher in the milk of the Sarda breed (P<0.05) while CLA (P<0,01), vaccenic acid (P<0.01) and t-FA (P<0.01) were higher in the milk of the Maltese breed, suggesting that the breed has significantly affected the milk FA profile of goats fed the same diet and kept under the same conditions of management.
